Tenuta Sant’Anna 2020 Prosecco DOC Rosé Brut

I love this pale peach sparkling rosé with just about every dish on our Japanese menu. It has a faint floral nose and slight fruitiness on the palate but is dry with a lovely long textural finish. It’s a pleasant drop on its own, but really shines with food, especially the beef (or tuna) tataki and the sushi platter in Menu 1.

Tenuta Sant’Anna 2019 Pinot Grigio Venezia DOC

This pale gold pinot grigio from near Venice is a great match with our prawn okonomiyaki in Menu 2 … and pretty tasty with the delicate agedashi tofu too! I like the way its savoury notes dance with the deliciously smoky bonito flakes and dashi in both these dishes.

Rocca 2020 Sangiovese Puglia IGT

This soft red from southern Italy is a surprisingly good match with Menu 3. It stands up to the sweetness of the teriyaki glaze on the yakitori, brings all the different elements of the chirashi-zushi together, and meets the umami of the miso-glazed eggplant head on. I like it lightly chilled, about 30 minutes in the fridge just before serving.

Cà Maiol Chiaretto 2019 Valtènesi Riviera del Garda Classico DOP

This pretty pink drop from Lake Garda is one of my favourite rosés and works a treat with the spicy barbecue sauce in our pork (or fish) katsu sando. It’s pretty tasty with the miso soup in Menu 4 too.
