Be Inspired Wine Pairing – Japanese – Sake

Be Inspired Sake Pairing
In collaboration with Black Market Sake

How can we eat Japanese without drinking sake?

I’m a sake novice – but Matt Young and Tim Watkins at Black Market Sake are Australia’s sake specialists. Well-seasoned sommeliers with many years experience matching food and wine, they’ve now turned their focus to one of their vinous passions: Japanese rice wine. I first met Matt when he was head sommelier at Aria restaurant, and I’ve enjoyed many a fine wine pairing from the hands of Tim at both Pilu at Freshwater and Automata. Matt recently took me through a sake tasting at their new sake bar, Ante (which you’ll read about in this month’s e-magazine) and Tim has kindly suggested the following sake matches for our Month of Japanese menus.
Order directly at the links below and start exploring the exciting world of sake today. Enter code BEINSPIRED at checkout for 10% off everything on the site, not just the below suggestions. And there’s free shipping on orders over $150.

(Looking for grape wine instead of rice wine? Check out Roberta’s wine pairings here).

Chiyo Shuzo ‘Shinomine Kimoto’ 2020 (Nara)

A fresh, drier style of sake with refined acidity that will complement the beef tataki without overpowering the more subtle flavours of the various types of sushi.

Moriki Shuzo ‘Suppin Rumiko no Sake’ 2020 (Mie)

Rumiko Moriki, one of Japan’s first female Toji (master brewers), has created a sake that will pair well with the mild sweetness of prawn and the savoury elements of both the okonomiyaki and the agedashi tofu.

Kidoizumi Shuzo ‘Hakugyokuko’ 2020 (Chiba)

This sake has great body and depth with initial sweetness opening up to a more savoury finish, especially paired with flavours like teriyaki and miso. Its refreshing acidity will enhance the chirashi-zushi while letting the flavour of the fresh seafood shine.

Miyako-Bijin ‘Usagi’ 2021 (Chiba, Awaji Island)

Miyako-Bijin’s Usagi is a real umami bomb! Dangerously easy to drink with the salty/savoury goodness of fried pork katsu and miso soup.

We made the pot-sticker dumplings and bang bang chicken from the Chinese class the other night. Once again both exceeded our expectations. My husband keeps saying it’s better than going out to restaurants as the recipes and quality are amazing.

Thank you for stocking our pantry with such authentic Ingredients and quality produce. We really like the flexibility of cooking over a couple of days and changing the order we cook the dishes in when we want to. And I love listening to the themed playlist while cooking.

I am absolutely loving Be Inspired! There are ingredients I have never worked with before so having the confidence to try something new is so much fun! The recipes are just amazing and the notes on what can be prep’d beforehand are a great help too. Thank you so much.

Food, wine and travel! Three of my favourite things! Be Inspired with Roberta has been a wonderful experience and given me more confidence in the kitchen. I have learnt so much, cooked things I never would have attempted without Roberta’s excellent videos, and used ingredients I have never tried before.

I'm a competent cook whose learned so much from Roberta's online cooking classes. The recipes are yummy and Roberta’s video guidance offers so many little tips to improve flavour and organise the flow of preparation. I enjoy her warmth, sense of humour, and ability to giggle at herself when she occasionally messes up.
